Apple Bread

 Recipe from Kathy Heck

1/2 cup butter or margarine

1 cup sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon soda

1/2 teaspoon salt

1/2 cups chopped nuts (optional)

3 cups finely chopped apples

Cream butter and sugar until light

Beat in eggs and vanilla

Combine flour, salt, soda. Stir in egg mixture. Mix in apples and nuts, if using.

Turn into  2- 7X3 loaf pans

Drizzle topping over tops.

Bake 350degrees 45-55 minutes. Makes two small loaves.

Topping: 1 tablespoon sugar mixed with 2 tablespoons margarine and 1 teaspoon cinnamon. Combine in saucepan. Heat until bubbles.


Alternate Recipe (from Grammie)

1 cup sugar

1/2 cup Crisco

2 eggs

1-1/2 teaspoon vanilla

1 cup apples

1-1/2 tablespoon milk

2 cups flour

1 teaspoon soda

1/2 teaspoon salt

Cook in 350 degree oven  59-60 minutes

Swedish Tuna Delight

 1 package of fine noodles

1 jar pimento stuffed olives (optional)

1 can tuna, 7 ounces

8 ounces American cheese

1/4 cup margarine

1/4 cup flour

1 teaspoon salt

1/8 teaspoon pepper

2 cups milk


Cook noodles and drain

Drain and slice olives

Drain and flake tuna

Make white sauce with margarine, flour, salt and milk

Melt marg in casserole in microwave, stir in flour and add milk. Microwave two minutes, stir, microwave two minutes, stir, til starts to thicken.


Add 2/3 of cheese and stir to melt

Combine noodles, tuna, olives in 1-1/2 quart casserole

Blend in sauce

Criss-cross remaining cheese strips over top. Or top with buttered crumbs.

Bake uncovered 350 degrees for 25 minutes


Mom's Substitutions

Use only half a bag of noodles

Make white sauce using these measurements instead:

3 Tablespoons margarine

3 Tablespoons flour

2 cups milk

Our Macaroni and Cheese

Cook about half a box of elbow noodles - 7 oounces (1 1/2 to 2  cups)

Or you can use other shapes of pasta.

While they are cooking on the stove,


Make a white sauce. I like to make mine in the microwave, right in the casserole dish:

    Melt 3 Tablespoons margarine or butter

    Mix in 2 Tablespoons flour

    Add Bit of salt

    1/2 tsp dry mustard (or 1 teaspoon)

    Stir in 1-1/2 cups  of milk

Microwave for 2 minutes. Stir. Microwave again and stir again.

When it starts to thicken, add about 8 ounces of cheddar or Swiss or American cheese

(I used sliced American cheese)

Microwave again to soften the cheese. Don't worry if it is a little lumpy.

Add in left over ham cubed up, optional.


When the noodles are done, stir them into the sauce in the casserole.

Then I like to top it -  I butter a slice of bread, cut it into quarters or fingers or butterfly-triangles, arrange over top of the casserole. Or melt a couple tablespoons of butter and stir in some bread crumbs, top casserole

Bake at 350° about 30 minutes or til bubbly


Left overs are yummy too

You might add a splash of milk, microwave a bit, stir and microwave again.

Serve with toast or biscuits or a meat cake.


Karen Monahan’s Hamburg Recipes


The "scrambled" hamburg recipe:  I just take a pack of hamburg (whatever size you want) and fry it, chopping it into little pieces while it cooks.  Then I add some water to almost cover it and a beef bouillon cube or two and let it cook for a bit.  I mix up some flour and water and add that to thicken the gravy.  And that's it!  Sometimes I add a little gravy master to add some color.  Pretty easy!  I usually make it with mashed potatoes.  Yummy.


Meatcakes -- you know what to do with them, right?  Sure you do!  I just make little hamburgers (maybe ping pong ball size, flattened).  Fry them til cooked, then add water to just about cover them, with a beef bouillon cube.  That's it!  Let that cook for a while, and I serve it with mashed potatoes as well.  That's yummy too!  But I'm sure you know how to make that.  Mom used to make that.

Chocolate Chip Cookie Cake

Emily shares, “This is one of my family’s favorites and I love it because it’s quick, one bowl and no mixer required. They are very similar to Toll House® cookie bars, but chewier. Must be the butter and brown sugar. Yum!”

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter (1 stick) melted (in 2 cup measure)
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup chocolate chips

Preparation

Pre-heat the oven to 350°F.
Line pan with foil. Grease the foil.

Combine the flour, baking powder and salt in a small bowl. Melt the butter in a medium size bowl in the microwave. Quickly mix in the brown sugar until dissolved. Whisk in the egg and vanilla. Add the flour mixture and stir until just combined. Mix in the chocolate chips. 

Pour the batter into a greased 8-inch x 8-inch pan (I line the pan with foil and grease the foil so that you can lift the whole thing out and cut into even squares after it’s baked) and bake for 22-28 minutes, or until no crumbs come out when a toothpick is inserted in the middle. Do not overbake!

Patties Parmesan

from The Yankee Kitchen Program

1 lb ground hamburg
1 Onion - chopped fine
1 tsp salt
1 teaspoon Worcestershire sauce
Pepper to taste

½ cup Parmesan cheese
¼ cup Cornflake crumbs or Bread crumbs
1 Egg, beaten

8 ounces Tomato sauce
1 teaspoon Italian seasoning
6 slices Mozzarella cheese

Mix first 5 ingredients. Shape into 6 patties.

Mix parmesan cheese and crumbs on a piece of waxed paper
In a bowl, beat the egg.
Dip each pattie into egg then into crumbs

Brown on both sides in skillet. Drain off fat,
Mix sauce with seasoning and pour over patties. Cover and cook 15 min.
(may be done in electric frypan)
Top with mozzarella cheese slices
Cook uncovered 2-3 min to melt cheese

Pound Cake

From Sherry Redlon

Cream together:
2 sticks margarine
1/2 cup shortening

Cream in:
3 cups sugar

Add one at a time to above:
5 eggs
2 teaspoons vanilla

Sift and add alternately with milk:
3 cups flour
1/2 teaspoons baking powder
1 cup milk

Fill 2 greased loaf pans - 9X5 or three 8X4 pans
Bake 325 degrees for 1 to 1 1/2 hours for 9X5
Bake 50-60 minutes for 8X4 pans

For chocolate add 4 tablespoons cocoa and 1/2 tsp salt

Reeses Cup Squares

2 cups confectioners sugar
2 cups graham cracker crumbs
2 sticks butter
1-18 ounce jar peanut butter
Crush graham crackers in a bag.
Add sugar and combine in bag. Dump into a bowl.
Soften peanut butter in the jar in microwave.
Pour into bowl and mix.
Melt butter in the empty peanut butter jar.
Combine all well in the bowl.
Pour into 13 X 9 inch pan.
Pop into refrigerator while making topping.

Topping
1 cup chocolate bits
1 stick butter
Place both ingredients in the peanut butter jar,
Melt together in microwave, slowly.
Mix and pour over peanut butter layer.
Spread to cover.
Refrigerate to harden.
Note: It always takes longer than planned to cool and harden completely.

Almond Squares

Aunt Ellen's Almond Squares

Beat: 2 eggs until thick
Add: 1 cup sugar
Fold in 1 cup flour
Mix in: ½ cup melted butter
Add: 2 teaspoons almond extract
Pour into greased and floured 7 X 10 pan
Sprinkle with ground nuts (walnuts or almonds) or sliced almonds (if desired)
Bake 30 minutes at 350° (this may be a bit much - just til it starts to brown
Sprinkle to with confectioners sugar
Cool and cut into squares

Mini Honey-Mustard Meatloaves with Roasted Potatoes


From Martha Stewart's Everyday Food

Prep: 35 minutes
Total: 55 minutes


    * 2 tablespoons olive oil, plus more for baking sheet
    * 2 tablespoons plus 1 teaspoon honey mustard
    * 2 tablespoons ketchup
    * 1 pound ground beef chuck
    * 1 large egg, lightly beaten
    * 1/2 cup Panko (Japanese breadcrumbs)
    * 1 cup shredded white cheddar (about 4 ounces)
    * Coarse salt and ground pepper
    * 1 pound white new potatoes, scrubbed and quartered
    * 1 tablespoon red-wine vinegar
    * 1 head Boston lettuce, torn into bite-size pieces

Directions

   1. Preheat oven to 450 degrees, with racks in upper and lower thirds. Brush a rimmed bak ing sheet with oil. In a small bowl, mix together 2 tablespoons mustard and ketchup.
   2. In a medium bowl, combine beef, egg, panko, 1/2 cup cheddar, 1/2 teaspoon salt, and teaspoon pepper. Form into four 2-by-4-inch loaves; place on baking sheet. Brush with mustard mixture; top with remaining 1/2 cup cheddar. On another rimmed baking sheet, toss potatoes with 1 tablespoon oil; season with salt and pepper.
   3. Transfer meatloaves to upper rack of oven, and place potatoes on lower rack. Bake until loaves are cooked through, 15 to 20 minutes, rotating sheets after 10 minutes. Remove loaves from oven; continue to roast potatoes until tender, about 5 minutes.
   4. Meanwhile, in a large bowl, whisk together remaining tablespoon oil, remaining teaspoon mustard, and vinegar; season with salt and pepper. Add lettuce to bowl, and toss. Serve meatloaves with potatoes and salad.

Crusty Beef and Noodle Casserole (a.k.a. Casserole)



2 tablespoons oil
2 pounds ground beef
1 onion chopped
40 ounces Prego spaghetti sauce
1 teaspoon salt
1 pound grated sharp cheddar
1 pound fine noodles, cooked

Heat oil in large skillet. Add onion and cook until golden brown.
Add meat and cook and stir until brown. Pour off the grease.
Add spaghetti sauce

In large casserole, place:
1/2 of noodles
Top with half of meat/sauce mixture
Then top with half of cheese
Repeat

Bake at 325° for 50-60 minutes.

Note:
I halve all ingredients.
Substitute ground turkey for beef.

Toll House Cookie PIe

Ingredients: 
2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, melted and cooled
1 cup semi-sweet chocolate chips
1 cup chopped nuts, optional
One 9-inch  pie crust, unbaked

Directions:
Preheat oven to 325 degrees.Beat the eggs in a large bowl until they are foamy. Then beat in the flour, sugar and brown sugar. Then beat in the butter. Fold in the chocolate chips and spoon into the pie shell.Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.

Serve with whipped cream or ice cream
